elderberry

A friend’s mother-in-law canned elderberries and gave me a number of jars.  When I was married, I liked to make pies for the kids in early winter. I’ve always thought elderberries a bit  gravelly because of the seeds.  I might have been prejudiced because when I was young Mother made me help pick the pretty little berries off the stems.

Pastry for a deep pie, double crust                                                                                                                                                                                              3 cups of elderberries                                                                                                                                                                                                                        1 cup of white sugar                                                                                                                                                                                                                           4 tablespoons of flour                                                                                                                                                                                                                         2 tablespoons of butter

Mix the sugar, flour; sprinkle 1/3 of the mixture on the rolled-out pastry. Put in  berries. Sprinkle with 1/4 remaining sugar mixture. Put in remaining and sprinkle remaining sugar on top. Dot with butter, put on top crust vents for steam, Bake for 45 minutes in 350 degree oven.
