A friend’s mother-in-law canned elderberries and gave me a number of jars.  When I was married, I liked to make pies for the kids in early winter. I’ve always thought elderberries a bit  gravelly because of the seeds.  I might have been prejudiced because when I was young Mother made me help pick the pretty little berries off the stems.

Pastry for a deep pie, double crust                                                                                                                                                                                              3 cups of elderberries                                                                                                                                                                                                                        1 cup of white sugar                                                                                                                                                                                                                           4 tablespoons of flour                                                                                                                                                                                                                         2 tablespoons of butter

Mix the sugar, flour; sprinkle 1/3 of the mixture on the rolled-out pastry. Put in  berries. Sprinkle with 1/4 remaining sugar mixture. Put in remaining and sprinkle remaining sugar on top. Dot with butter, put on top crust vents for steam, Bake for 45 minutes in 350 degree oven.

 

Delicious. The boys would tell me it taste like fig newton. Yoummy!!!!
